Shrimp Salad

2 1/4 Tbsp. white vinegar
1/2 tsp. salt
1/2 tsp. chili powder
3 Tbsp. olive oil
3 cup salad greens
2 grapefruit, cut into segments
2 avocados, peeled and sliced
10 oz. cooked shrimp
1 scallion, thinly sliced

  1. Combine vinegar, salt, and chili powder in a small bowl. Whisk in oil.
  2. Place salad greens on 4 plates.
  3. Top with grapefruit, avocado, and shrimp.
  4. Sprinkle with scallions then drizzle with chili-dressing.
