1/2 Tbsp. olive oil
1 Tbsp. white wine vinegar
1/2 tsp. Dijon mustard
1/4 tsp pepper
1/4 tsp. salt
2 garlic cloves, minced
Combine in a jar with a tight lid; shake well. Pour over fresh spinach or other salad greens. Refrigerate leftover vinaigrette.
