Italian Baked Pork Chops

4 tomatoes, quartered
1 1/2 cup peeled and diced eggplant (1 small)
2 cups sliced zucchini (2 small)
1/2 # mushrooms, halved
1 clove garlic, minced
1 bay leaf
1/4 tsp. basil
1/4 tsp. parsley
1/2 tsp. pepper
1 Tbsp. olive oil
4 pork chops

Combine all ingredients except oil and pork chops. Oil a 9 x 13 inch baking dish with oil. Then place the vegetable mixture in the dish and top with pork chops. Cover with foil and bake at 350 degrees for one hour or till the meat is done.
